| Bravo, we use the same cooker. I also do pork when I do ribs and usually get them at Sams, vacuum packed.
If you haven't already, try apple wood with ribs. It gives a milder smoke flavor that I think is perfect for the ribs.
I've lived in Texas since 1980 and I've tried beef ribs only once. It's hard to beat a good beef brisket, but for ribs pork is best.
