I don't really use a recipe but here's what I do.

I use a dry rub consisting of salt, pepper, paprika, cayenne pepper, garlic and onion powder. Almost forgot, a little brown sugar for ribs. You should be able to get a recipe for this on foodtv.com or you can buy them at the store. Rub this into the ribs before cooking, overnight is best.

Cook the ribs using offset method. If you don't have a smoker build your fire to one side of the grill and keep the ribs on the other side. Cook low heat for 3 to 4 hours. If you like sauce, put it on for the last 30 minutes.

Sorry Maverick,
I got a great recipe for great wet ribs, However I keep to myself.
If you want really good ribs they have to cook really slowly. Many people like dry ribs while I prefer wet ribs but the cooking is amost the same. If you would like just let me know what kind of ribs you prefer and I will look up a couple of recipes for you. I start off with recipes and then start making my own.
A buddy and I have a rib off every year making a few changes during the year to fine tune them. Mostly it's an excuse to get everyone together and drink beer and eat like pigs.
My sauce is kinda sweet and spicy. Tell me what you like and I will try to help you out. Check this on out. I started here.

Maverick:

A good smoker is essential. Do you have an offset smoker like the one DaveE mentioned??

If you want really GREAT ribs, cook them on low heat until medium rare, and then server.

No... Wait...

Yep....slow cooking is key.

I marinate mine in a BBQ sauce overnight and cook them for about 3 hours in a 250 oven (lacking a smoker).

I finish them on a grill, sauce them once more and serve.

Look for something like this. Most come with a thermometer to control the heat and you can still use it as a regular charcoal by putting the fire on the right side.

One thing I've learned the hard way is don't overdo the wood chips. The meat can get to smokey and bitter if you do.

Maverick, I had the same problem not having a smoker but I found away around it until I can buy the smoker I want.
At most Grocery stores you can buy a small bottle of liquid smoke. It's the real deal so be warned not to use to much of it. It's very concentrated.
The other way that I personally like better is a small cast iron wood chip box that you can place on top of the BBQ. If you cook them slow, I would recommend it. The thing that I like about it, is that you can place a combination of wood chips. I use hickory and cherry wood. I soak it for 3 hour in water then put the wet chips in the cast iron box and the place it on a BBQ that has been on high for 20 minutes. Once I put the box in the BBQ I wait 5 minute than lower the temperature. Hmmmmm. Time to make a batch of ribs!!

Oh I see, your one of those people. :p

Just kidding, I use gas when I'm in a hurry. Charcoal and wood are pretty much a weekend thing. And yes, you can smoke like Gridiron said. I don't personally like it as much but it's a good alternative.
