Do you strike the ball or pick the ball?

My biggest problem with this game is that I've never been a good ball "striker" with my irons. I've recently invested in new Cleveland Launcher Irons, and while they do help me hit the ball much straighter, my yardage difference with them compared to my old knock off's is practically the same.

It could be that I'm opening up my stance too much as well as the club face, which is why I only get about 130-140 yards from a 7 iron.

Are there any good reading materials or videos you guys can recommend to help me with this dilema? Or maybe it's time for a lesson or two?

I think you just solved your own problem. A couple of lessons will save time and frustration trying to figure it out.
